Berry Quinoa Salad With Lemon Tahini Dressing

Dice the onions

Slice the strawberries

Shred/chop finely the cabbage

Yields

2-4 Servings

Ingredients

Salad

1 cup quinoa

2 cups water

2 cups kale, spinach, or mixed baby greens

1 cup diced sweet onions

1 cup sliced strawberries

1 cup of mixed berries

1 cup shredded white or purple cabbage

¼ cup pumpkin seeds

Handful of walnuts

1 small avocado


Lemon Tahini Dressing

1/4 cup olive oil

3 tablespoons fresh lemon juice, to taste

2 tablespoons tahini

1 garlic clove, minced

1/2 teaspoon sea salt

black pepper to taste


Directions

  1. I added sliced avocado and sprinkled walnuts on top (not shown in photo)
  2. Add 2 cups of cold water to 1 cup quinoa, add a pinch of sea salt. Bring to a boil. Cover and simmer for 15-20 minutes until tender or most of liquid has been absorbed
  3. Remove from heat, cover, and let the quinoa rest for 5 minutes, and use fork to fluff
  4. Place the greens, onions, berries, and cabbage in a large bowl
  5. To make the dressing: In a small bowl combine the olive oil, lemon juice, tahini, garlic, salt, and pepper. Adjust the lemon, salt, and pepper to taste
  6. Add the quinoa and pumpkin seeds to the large bowl and drizzle dressing over the salad. Toss Well
  7. Add avocado slices and walnuts
  8. Serve immediately or chill

Notes

  • I added sliced avocado and sprinkled walnuts on top (not shown in photo)
  • Can really play with this salad and use any type of nuts
  • Chopped apples are a great addition as well
