Bulgur Feta Cheese Salad Recipe

Prep Notes

  1. Dice the onions
  2. Chop the parsley finely
  3. Peel and dice the cucumber
  4. Slice the cherry tomatoes in halves
  5. Chop the walnuts

Cooking Time

12-15 minutes


Approx. 6 servings


1 cup bulgur wheat

2 cups water

2 freshly squeezed lemons

¼ cup extra virgin olive oil

1 cup diced sweet onions

1 cup finely chopped parsley

1 large peeled and diced cucumber

2 cups cherry tomatoes halved

1 cup of crumbled feta cheese

¼ cup pumpkin seeds

¼ cup chopped walnuts

½ cup dried cherries

Sea salt and pepper to taste


  1. Add 2 cups of cold water to 1 cup bulgur, add a pinch of sea salt
  2. Bring to a boil; cover and simmer for 12 - 15 minutes or until tender
  3. Drain off excess liquid in a strainer
  4. Add in the lemon juice, olive oil, cherry tomatoes, parsley, onions, feta, pumpkin seeds, walnuts, and dried cherries
  5. Mix well, add salt or pepper to taste, and refrigerate for a couple of hours to bring out the flavor


  • Let bulgur sit in refrigerator overnight for more flavor
