Creamy Green Spring Vegetable Soup

  • Crush the garlic cloves and crush all the vegetables

Ingredients

  • 1 leek or onion
  • 4 garlic cloves, roughly chopped
  • 2 stalks celery, roughly chopped
  • 1 large head broccoli, finely chopped
  • 2 cups, frozen peas
  • 2 big handfuls of baby spinach
  • Half a stalk of asparagus
  • Handful of fresh parsley
  • Handful of fresh mint
  • 1 lemon, freshly squeezed
  • 1 large avocado, chopped
  • 4 cups water
  • 2 tablespoons Sea Salt (or to taste)
  • 1 tablespoon pepper (or to taste)
  • 2 tablespoons Coconut oil or Ghee

Directions

  1. Preheat a large saucepan overlow-medium heat
  2. Add the oil/ghee and leek and garlic,stir until translucent
  3. Add remaining vegetables and herbs
  4. Season well and cook for 10 minutes on low heat
  5. Pour in the water and stir well
  6. Reduce the heat to simmer and cook for 5 minutes
  7. Set aside to cool slightly. Blend until smooth with hand-held immersion stick or blender
  8. Add in the avocado and blend until mixed together

Notes

  • Sprinkle nuts or seeds of your choice on top
