Lemon Herb Roasted Chicken

Prep Notes

  1. Preheat oven to 400 F
  2. Chop the onion into large chunks and mince the garlic
  3. Rinse the chicken and pat dry and place in a bowl with the chopped onion

Cooking Time

1 Hour or Until Evenly Browned


4-6 Servings


  • 4 lbs (About 8 pieces) chicken breast- skin on
  • 1 Onion - cut in large chunks
  • 1/3 cup Extra Virgin Olive Oil
  • 2 lemons, 1 sliced, 1 juiced
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic seasoning
  • Sea salt and pepper to taste


    1. In a separate small bowl, whisk together the olive oil, minced garlic, garlic seasoning, oregano,rosemary, thyme, sea salt, pepper, and juice from one lemon
    2. Pour the mixture evenly over the chicken
    3. Place the chicken on a baking pan with lined tin foil (skin side up)
    4. Slice the other lemon and place thin pieces on the chickens evenly
    5. Bake for 1 hour until chicken is fully cooked and slightly browned, flipping halfway through (take a spoon and scatter the juices on the chicken pieces when you flip the chicken
    6. Remove from oven, cover with foil for 10 minutes and serve


  • If you have time, let the chicken marinade in the refrigerator for an hour to bring out the flavors
  • Add Fresh Rosemary for garnish
  • Add vegetables and sweet potatoes with the chicken for an all-in one meal!
