- 1/3 cup plain Greek Yogurt
- 1/2 cup rolled oats
- 2/3 cup coconut milk (can use unsweetened or milk of choice)
- 1 tablespoon of chia seeds
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon unfiltered, raw honey
- Whisk together all ingredients in a small mixing bowl
- Spoon into a Mason PINT jar with a tight fitting lid
- Close and refrigerate for at least 4 hours, but preferably overnight before eating
- Enjoy the next morning with some sliced berries, bananas, pumpkin seeds, or any additional toppings of your choice!
