Overnight Oats

Ingredients

  • 1/3 cup plain Greek Yogurt
  • 1/2 cup rolled oats
  • 2/3 cup coconut milk (can use unsweetened or milk of choice)
  • 1 tablespoon of chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon unfiltered, raw honey

Directions

  1. Whisk together all ingredients in a small mixing bowl
  2. Spoon into a Mason PINT jar with a tight fitting lid
  3. Close and refrigerate for at least 4 hours, but preferably overnight before eating
  4. Enjoy the next morning with some sliced berries, bananas, pumpkin seeds, or any additional toppings of your choice!
