Sweet and Sour Roasted Carrots and Sweet Potatoes

  1. Preheat oven to 400 Degrees Fahrenheit
  2. Peel the carrots and sweet potatoes
  3. Chop the carrots, sweet potatoes, and onions into even small chunks

45-60 Minutes

Ingredients

8 medium carrots

4 sweet potatoes

2 sweet onions

3 Tablespoons of extra-virgin olive oil

1 freshly squeezed orange

½ a freshly squeezed lemon

1 tablespoon organic raw honey

1 teaspoon of cinnamon

Directions

  1. Toss the carrots, sweet potatoes, and onions with the olive oil, orange juice, lemon juice, honey, and cinnamon
  2. Roast for 45-60 minutes, or until vegetables are tender and brown
  3. Serve and sprinkle a dash of cinnamon on top
  4. *Can add raisins or dates to the recipe for additional sweetness!

Notes

If you have the time let the vegetables soak in the juices for a bit before placing in the oven
