Sweet roasted red and yellow beets

Prep Notes

  • Pre-heat the oven to 400 degrees
  • Peel and chop beets into medium sized chunks (they shrink)

  • 6 medium sized beets, peeled and chopped (can use combination of red and yellow)
  • 1 tablespoon coconut oil, melted
  • 1 half teaspoon rosemary
  • 1 half teaspoon thyme
  • 1 half teaspoon garlic
  • 1 teaspoon oregano
  • sea salt and pepper to taste


  • Melt a tablespoon of coconut oil
  • Place the beets in a mixing bowl
  • Toss the beets in the coconut oil, garlic, rosemary, thyme, oregano, sea salt, and pepper
  • Place on a cooking sheet topped with parchment paper
  • Roast in the oven for 30-35 minutes or until tender (mix them half way through)


  • Enjoy as a warm side dish or toss it in a salad
