Watermelon Salad with Feta Cheese and Mint

1 small seedless watermelon

1/2 of a red onion, thinly sliced

1/2 cup finely chopped mint leaves

1/4 cup crumbled Feta

1 tablespoon extra virgin olive oil

freshly squeezed juice from half of a lime 

sea salt and pepper to taste


  • Cut the watermelon in half.
  • Using a large spoon or a melon baller, scoop out bite-size pieces of the watermelon and add to a large bowl
  • Slice the onion into thin pieces and scatter over the watermelon
  • Crumble the feta cheese over the salad
  • Drizzle the olive oil and lime juice and stir
  • Scatter the mint leaves over the top
  • Sprinkle with sea salt and pepper to taste
