Bulgar Feta Salad

Servings: 6 Servings

Ingredients:

  • 1 cup bulgur wheat

  • 2 cups water

  • 2 freshly squeezed lemons

  • ¼ cup extra virgin olive oil

  • 1 cup diced sweet onions

  • 1 cup finely chopped parsley

  • 1 large peeled and diced cucumber

  • 2 cups cherry tomatoes halved

  • 1 cup of crumbled feta cheese

  • ¼ cup pumpkin seeds

  • ¼ cup chopped walnuts

  • ½ cup dried cherries

  • Sea salt and pepper to taste


Directions

  • Dice the onions

  • Chop the parsley finely

  • Peel and dice the cucumber

  • Slice the cherry tomatoes in halves

  • Chop the walnuts

  • Add 2 cups of cold water to 1 cup bulgur, add a pinch of sea salt

  • Bring to a boil; cover and simmer for 12 - 15 minutes or until tender

  • Drain off excess liquid in a strainer

  • Add in the lemon juice, olive oil, cherry tomatoes, parsley, onions, feta, pumpkin seeds, walnuts, and dried cherries

  • Mix well, add salt or pepper to taste, and refrigerate for a couple of hours to bring out the flavor


Notes:

  • Let bulgur sit in refrigerator overnight for more flavor
