Chicken Veggie Freezer Packs

Servings: 2 Servings

Ingredients:

  • 1 package boneless, skinless, chicken breast - cut into 2-inch thick pieces

  • 1 red onion - cut in large chunks

  • 2 red peppers - cut into large chunks

  • 1 small head of broccoli - broken into florets

  • 1/3 cup Extra Virgin Olive Oil or Avocado Oil

  • 1/2 lemon, juiced

  • 3 garlic cloves, minced (use fresh pre-minced to save time)

  • 1 tablespoon Oregano

  • 1 tablespoon Garlic powder

  • Sea salt and pepper to taste

Directions:

  • Cut the chicken into 2-inch thick pieces

  • Cut the veggies into chunks

  • Place the vegetables and chicken in a large plastic bag

  • Add the oil, lemon juice, and seasonings to the bag

  • Seal the bag and shake well

  • Place in freezer and defrost the night prior when you are ready to cook in the oven, on the stovetop, or on the grill!
