Roasted Sweet Potatoes

Cooking Time: 30-35 Minutes
Total Time: 40 Minutes
Servings: 4 Servings
Ingredients:
2 large sweet potatoes
2 tablespoons oil (I used avocado oil)
1 teaspoon minced garlic or garlic powder, to taste
1 tablespoon lemon
1 teaspoon salt, to taste
1 teaspoon black pepper, or to taste
Directions:
Preheat oven to 400 Degrees Fahrenheit
Scrub and peel the sweet potatoes (You can choose to leave some skin on too)
Chop them into even small chunks
Toss sweet potatoes with the oil, lemon juice, sea salt, and pepper
Roast for about 30-35 minutes or until potatoes are tender and slightly crisp (I personally like them on the more crispy side ;-)
Serve warm as a side dish or cool and add to a salad
Notes:
Can add a tablespoon of raw, unfiltered honey for extra sweetness OR can add paprika or red pepper for a bit of a spicy punch
