Roasted Sweet Potatoes

Cooking Time: 30-35 Minutes

Servings: 4 Servings

Ingredients:

  • 2 large sweet potatoes

  • 2 tablespoons oil (I used avocado oil)

  • 1 teaspoon minced garlic or garlic powder, to taste

  • 1 tablespoon lemon

  • 1 teaspoon salt, to taste

  • 1 teaspoon black pepper, or to taste

Directions:

  • Preheat oven to 400 Degrees Fahrenheit

  • Scrub and peel the sweet potatoes (You can choose to leave some skin on too)

  • Chop them into even small chunks

  • Toss sweet potatoes with the oil, lemon juice, sea salt, and pepper

  • Roast for about 30-35 minutes or until potatoes are tender and slightly crisp (I personally like them on the more crispy side ;-)

  • Serve warm as a side dish or cool and add to a salad

Notes:

  • Can add a tablespoon of raw, unfiltered honey for extra sweetness OR can add paprika or red pepper for a bit of a spicy punch
