Ground Turkey Veggie Sautee

Ingredients:
1 tablespoon coconut oil
1 pound lean ground turkey
1 large zucchini, chopped
1 large squash, chopped
1 sweet onion, diced
2 large handfuls of kale, chopped into large pieces
2 large carrots, chopped
2 garlic cloves, minced
1 cup no-sugar added spaghetti sauce
Sea salt, pepper, garlic, and oregano to season
Directions:
Mince the garlic, dice the onions finely, and chop the zucchini, squash, carrots, and kale
Season the ground turkey with sea salt pepper, garlic, and oregano and break it up into small pieces
In a skillet, heat coconut oil over medium-high heat and add the onion and fresh garlic. Stir and let simmer until golden brown
Add the ground turkey and cover until almost cooked through (About 8-10 minutes)
Add zucchini, squash, carrots, and tomato sauce and cover the skillet and cook until they are tender (About 10 minutes)
Add the kale and simmer for another 2-3 minutes
Notes:
Serve over a bed of greens or side salad and enjoy!
