Ground Turkey Veggie Sautee

Servings: 2 Servings

Ingredients:

  • 1 tablespoon coconut oil

  • 1 pound lean ground turkey

  • 1 large zucchini, chopped

  • 1 large squash, chopped

  • 1 sweet onion, diced

  • 2 large handfuls of kale, chopped into large pieces

  • 2 large carrots, chopped

  • 2 garlic cloves, minced

  • 1 cup no-sugar added spaghetti sauce

  • Sea salt, pepper, garlic, and oregano to season

Directions:

  • Mince the garlic, dice the onions finely, and chop the zucchini, squash, carrots, and kale

  • Season the ground turkey with sea salt pepper, garlic, and oregano and break it up into small pieces

  • In a skillet, heat coconut oil over medium-high heat and add the onion and fresh garlic. Stir and let simmer until golden brown

  • Add the ground turkey and cover until almost cooked through (About 8-10 minutes)

  • Add zucchini, squash, carrots, and tomato sauce and cover the skillet and cook until they are tender (About 10 minutes)

  • Add the kale and simmer for another 2-3 minutes

Notes:

  • Serve over a bed of greens or side salad and enjoy!
