  • 1/2 cup yellow mustard

  • 1/2 cup raw unfiltered honey

  • 1 tbsp freshly squeezed lemon juice

  • Sea salt and pepper to taste

Dressing Directions:

  • In a small bowl combine the plain Greek yogurt, yellow mustard, honey, and lemon juice

  • Whisk until this is very smooth.

Salad Ingredients:

  • 1 wide mouth 32 oz mason jar

  • 2-3 Tablespoons homemade honey mustard dressing

  • 1 cup kale (or until packed well in jar. See directions below)

  • 1/2 cup cubed chicken

  • 1/4 cup halved cherry tomatoes

  • 1/4 cup largely chopped cucumbers

  • 1/4 cup broccoli florets

  • 1/4 cup almond slivers

Mason Jar Salad Directions:

  • Layer the mason jar in the following order:

    • 2-3 tablespoons of the dressing

    • Broccoli

    • Cherry tomatoes

    • Chicken

    • Cucumbers

    • Kale (Packed in very tightly)

    • Almond slices

  • Pack everything in well

  • Close the lid tightly and refrigerate

  • When you’re ready to eat, take it out of the fridge a few minutes prior, so the dressing settles. Shake well. Eat straight out of the jar or pour into a bowl, mix, and enjoy!

Notes:

  • As always, get creative with your mason jar! Leave out an ingredient or add your own twist!

  • Throw in some craisins or raisins on the top for added sweetness
