Lemon Vinaigrette

Servings: About 2 Cups of Dressing

Ingredients:

  • 1/4 cup red wine vinegar

  • 1/2 cup extra virgin olive oil

  • 1 tablespoons dijon mustard

  • Juice of 1 lemon

  • 1 clove garlic, finely minced OR 1-2 teaspoons minced garlic

  • 1 tablespoon raw, unfiltered honey

  • 1/4 cup water

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon oregano

Directions:

  • Combine all ingredients in a jar with a tight-fitting lid, shake until well combined. (can also whisk ingredients together in a bowl)

  • Refrigerate and let flavors blend if making dressing in advance

Notes:

  • Play with the seasonings to taste. Can add or use less water to your liking.

  • The dressing should last about 2 weeks in the refrigerator

  • The oil will solidify in the fridge, so let it sit out for a bit and shake well prior to use
