Lemon Vinaigrette

Servings: About 2 Cups of Dressing
Ingredients:
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1 tablespoons dijon mustard
Juice of 1 lemon
1 clove garlic, finely minced OR 1-2 teaspoons minced garlic
1 tablespoon raw, unfiltered honey
1/4 cup water
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon oregano
Directions:
Combine all ingredients in a jar with a tight-fitting lid, shake until well combined. (can also whisk ingredients together in a bowl)
Refrigerate and let flavors blend if making dressing in advance
Notes:
Play with the seasonings to taste. Can add or use less water to your liking.
The dressing should last about 2 weeks in the refrigerator
The oil will solidify in the fridge, so let it sit out for a bit and shake well prior to use
