Overnight Chia Oat Pudding

Total Time: 5 Minutes (Plus let sit overnight)

Servings: 1 Serving

Ingredients:

  • 1/2 cup old-fashioned rolled oats (gluten-free, if needed)

  • 1/4 cup chia seeds

  • 1 cup milk, any kind, including non-dairy

  • 1 teaspoon raw unfiltered honey

  • 1teaspoon peanut butter

  • 1/2 cup berries (of choice)

  • 1/2 sliced banana

Directions:

  1. Place the oats, seeds, milk, honey, and nut butter in a mason jar with a lid. Refrigerate overnight.

  2. In the morning mix the pudding (will be a gelatin consistency)

  3. Top with the berries and bananas

  4. Can add any nuts or seeds for extra crunch

Notes:

  • Can double or triple the recipe for larger batch and separate into individual mason jars to have for the week!

  • Mix up the fruit and nuts you use to add more variety

  • Honey and nut butter are optional

  • Switch up peanut butter for almond butter or cashew butter
