Lemon Herb Roasted Chicken

Total Time: 1 Hour, 15 Minutes
Servings: 4-6 Servings
Ingredients:
4 lbs (About 8 pieces) chicken breast- skin on
1 Onion - cut in large chunks
1/3 cup Extra Virgin Olive Oil
2 lemons, 1 sliced, 1 juiced
4 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon garlic seasoning
Sea salt and pepper to taste
Directions:
In a separate small bowl, whisk together the olive oil, minced garlic, garlic seasoning, oregano,rosemary, thyme, sea salt, pepper, and juice from one lemon
Pour the mixture evenly over the chicken
Place the chicken on a baking pan with lined tin foil (skin side up)
Slice the other lemon and place thin pieces on the chickens evenly
Bake for 1 hour until chicken is fully cooked and slightly browned, flipping halfway through (take a spoon and scatter the juices on the chicken pieces when you flip the chicken
Remove from oven, cover with foil for 10 minutes and serve
Notes:
If you have time, let the chicken marinade in the refrigerator for an hour to bring out the flavors
Add Fresh Rosemary for garnish
Add vegetables and sweet potatoes with the chicken for an all-in one meal!
