Sweet Roasted Red and Yellow Beets

Ingredients:
6 medium sized beets, peeled and chopped (can use combination of red and yellow)
1 tablespoon coconut oil, melted
1 half teaspoon rosemary
1 half teaspoon thyme
1 half teaspoon garlic
1 teaspoon oregano
sea salt and pepper to taste
Directions:
Pre-heat the oven to 400 degrees
Peel and chop beets into medium sized chunks (they shrink)
Melt a tablespoon of coconut oil
Place the beets in a mixing bowl
Toss the beets in the coconut oil, garlic, rosemary, thyme, oregano, sea salt, and pepper
Place on a cooking sheet topped with parchment paper
Roast in the oven for 30-35 minutes or until tender (mix them half way through)
Notes:
Enjoy as a warm side dish or toss it in a salad
