Roasted Squash and Zucchini

Cooking Time: 20 Minutes
Total Time: 30 Minutes
Servings: 3-4 Servings
Ingredients:
2 large zucchinis, sliced
2 large squash, sliced
1 large onion, chopped into chunks
1 tablespoon coconut oil, melted or avocado oil
1 teaspoon lemon
1 half teaspoon dill
1 half teaspoon garlic
sea salt and pepper to taste
Directions:
Pre-heat the oven to 375 degrees
slice the zucchini and chop the onion
Melt a tablespoon of coconut oil or use avocado oil
Place the zucchini, squash, and onions in mixing bowl and toss with oil, dill, garlic, sea salt, and pepper
Place on a cooking sheet topped with tinfoil or parchment paper
Roast in the oven for 20 minutes or until tender (mix them half way through)
Notes:
Enjoy as a warm side dish or toss it in a salad
