Roasted Sweet Potatoes and Carrots

Ingredients:
6 carrots
3 sweet potatoes
1 large sweet onion
2 Tablespoons of extra-virgin olive oil
1 tablespoon organic raw unfiltered honey
1 teaspoon of cinnamon
1 teaspoon garlic
1 teaspoon of sea salt and pepper
Directions:
Preheat oven to 400 Degrees Fahrenheit
Peel the carrots and sweet potatoes
Chop the carrots, sweet potatoes, and onions into even small chunks
Toss the carrots, sweet potatoes, and onions with the olive oil, honey, cinnamon, garlic, sea salt, and pepper
Roast for about 30 minutes or until vegetables are tender and brown (Mix well halfway through)
Serve and sprinkle a dash of cinnamon on top
Notes:
Can add raisins or dates to the recipe for additional sweetness!
