Simple Vegetarian Power Salad

Ingredients:
Salad
2-3 cups of spinach
1 orange pepper, chopped
1 red pepper, chopped
1 cucumber, chopped
1/2 cup mushrooms, sliced
2 stalks celery, chopped
1 cup quinoa (prep ahead)
Handful of pumpkin seeds
Handful of pine nuts
2 Tablespoons Hemp seeds
Dressing
2 tablespoons Olive oil
1 tablespoon apple cider vinegar
1/2 teaspoon sea salt, pepper, and garlic
Directions:
Salad
Slice the peppers, cucumber, mushrooms, and celery (slice the veggies ahead of time to use during the week)
Lay the greens on the bottom of the bowl
Add the vegetables, pumpkin seeds, pine nuts, hemp seeds, and quinoa
Add the dressing and toss together
Dressing
Whisk together the olive oil, apple cider vinegar, sea salt, pepper, and garlic
Add additional seasoning to taste
Notes/Add-Ons
Add in chick peas, kidney beans, white northern beans, and sliced avocado
Prep the quinoa ahead
Chop the veggies and place in tupperware to use throughout the week
Whisk a large batch of dressing together and leave in fridge for the week
Can add any veggies to this!
