Sweet and Sour Purple Cabbage

Servings: 8 Servings
Ingredients:
1 head of red cabbage, sliced into strips (size doesn’t need to be perfect as long as cabbage is fairly uniform)
1 large onion, diced
2 green apples, chopped small
2 tablespoons avocado oil
3 tablespoons apple cider vinegar (to taste)
Cinnamon to taste
1/2 cup of raisins
1 teaspoon of stevia
Directions:
In a large pot, saute the onions and apples in the avocado oil until onions are translucent and apples are soft
Add in the cabbage, raisins, apple cider vinegar, and stevia
Mix everything well, cover pot, and leave on medium heat for about 10 minutes
Turn down to a simmer until fully cooked
Cook until everything is soft and cooked through
Notes:
Can make it more sour by adding more vinegar or more sweet by adding more cinnamon or stevia
Optional: Can add in walnuts at the end for extra crunch, salty flavor, protein, and healthy fat
