Sweet and Sour Purple Cabbage

Servings: 8 Servings

Ingredients:

  • 1 head of red cabbage, sliced into strips (size doesn’t need to be perfect as long as cabbage is fairly uniform)

  • 1 large onion, diced

  • 2 green apples, chopped small

  • 2 tablespoons avocado oil

  • 3 tablespoons apple cider vinegar (to taste)

  • Cinnamon to taste

  • 1/2 cup of raisins

  • 1 teaspoon of stevia

Directions:

  • In a large pot, saute the onions and apples in the avocado oil until onions are translucent and apples are soft

  • Add in the cabbage, raisins, apple cider vinegar, and stevia

  • Mix everything well, cover pot, and leave on medium heat for about 10 minutes

  • Turn down to a simmer until fully cooked

  • Cook until everything is soft and cooked through

Notes:

  • Can make it more sour by adding more vinegar or more sweet by adding more cinnamon or stevia

  • Optional: Can add in walnuts at the end for extra crunch, salty flavor, protein, and healthy fat
