Vibrant Egg Salad

Ingredients:
Salad
2 cups mixed greens (or green of your choice)
1/4 avocado
2 hard boiled eggs
1/2 cup broccoli
1/2 cup cherry tomatoes
1/2 cup cucumbers
1/4 cup roasted brussels sprouts (prep ahead)
1/4 cup roasted sweet potatoes (prep ahead)
Handful of pumpkin seeds
Dressing
1 tablespoon Olive oil
1 tablespoon lemon
1/2 teaspoon sea salt, pepper
Directions:
Salad
Boil the eggs (boil ahead of time and make a large batch to use throughout the week)
Slice the tomatoes, cucumbers, and pull apart the broccoli florets (slice the cucumbers, tomatoes, and broccoli ahead of time to use during the week)
Lay the greens on the bottom of the bowl
Add the fresh and roasted vegetables
Drizzle the dressing or toss all together
Toss with dressing, top with pumpkin seeds, and serve

Whisk together the lemon, olive oil, sea salt, and pepper
Add additional seasoning to taste

Prep ahead!
Roast the brussels sprouts and sweet potatoes in advance and use leftovers for this salad!
Boil a large batch of eggs ahead of time and use throughout the week
Chop the veggies and place in tupperware to use throughout the week
Whisk a large batch of dressing together and leave in fridge for the week
