Watermelon Feta Salad

Ingredients:
1 small seedless watermelon
1/2 red onion finely sliced
1/2 cup finely chopped mint leaves
1/4 cup crumbled Feta
1 tablespoon extra virgin olive oil
Freshly squeezed juice from half of a lime
Sea salt and pepper (to taste)
Directions:
Cut the watermelon into 1 inch chunks or use a mellon baller to scoop out bite-size pieces of the watermelon
Place in large bowl and mix in the mint leave and onions
Drizzle the olive oil and lime juice, and stir until evenly coated
Crumble the feta cheese over the salad
Sprinkle with sea salt and pepper to taste
Notes:
Can add more lime juice to your liking
