Watermelon Feta Salad

Ingredients:

  • 1 small seedless watermelon

  • 1/2 red onion finely sliced

  • 1/2 cup finely chopped mint leaves

  • 1/4 cup crumbled Feta

  • 1 tablespoon extra virgin olive oil

  • Freshly squeezed juice from half of a lime

  • Sea salt and pepper (to taste)


Directions:

  • Cut the watermelon into 1 inch chunks or use a mellon baller to scoop out bite-size pieces of the watermelon

  • Place in large bowl and mix in the mint leave and onions

  • Drizzle the olive oil and lime juice, and stir until evenly coated

  • Crumble the feta cheese over the salad

  • Sprinkle with sea salt and pepper to taste


Notes:

  • Can add more lime juice to your liking
