Zesty Skillet Taco Turkey

Servings: 3 Servings

Ingredients:

  • 1 tablespoon avocado oil or coconut oil

  • 2 garlic cloves, minced

  • 1 onion, finely diced

  • 2 large carrots, finely diced

  • 1 red bell pepper, diced

  • 1 cup mushrooms, diced

  • 2 celery sticks, diced

  • 1 pound grass-fed ground turkey (can substitute with beef)

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon pepper

  • 1 cup fresh salsa

  • Romaine lettuce hearts

Directions:

  1. Heat oil in a skillet and sauté the minced garlic and veggies on medium-high heat for about 5 minutes, until they begin to soften.

  2. Season the ground turkey with the spices

  3. Add meat to the skillet and cook for 10 minutes until browned. Break it up into small crumbles.

  4. Add in the salsa and mix well.

  5. Cover and let simmer for 5 minutes.

  6. Scoop out onto your lettuce wrap, taco, or taco salad. Add your favorite taco toppings, and enjoy!

Notes:

  • Can serve with black beans, rice, sliced avocado, sprinkled cheese, and your favorite hot sauce for an extra kick!
